Predator’s “If It Bleeds, We Can Kill It” making of documentary is one of the most candid, funny and honest behind the scenes features I’ve ever seen. What are some other great or similar docs or movie special features out there?

If you haven’t watched it, it is a must see. The actors and filmmakers are unbelievably open about the filming process and tell genuinely funny stories. Jesse Ventura could not give a more Jesse Ventura interview and Carl Weathers tells a great story about him and Arnold working out at 4 in the morning to avoid each other knowing that their muscles weren’t all natural.
