Question about The Menu (spoilers)

Why did chef need the barrel from the smokehouse? Was it just an exercise to see if she would go get it? But if so, then why were Elsa's last words "don't forget the barrel"

Also, did no one wonder where Elsa was? She was such an integral part of the restaurant but no one noticed she was missing. Seemed strange to me.
