(Serious) What's that Movie?

This is going to be a tough one ladies and gents! It's an oldie. late 1960's-1980. It's about a small town (definitely not American) being affected by this alien (parasite?). It's very pecular. I remember a scene where the protagonists (2 or 3 I believe) are sitting in a diner, and the waitress is... off? Everytime she comes back into the room her hairstyle changes. The protagonists are almost hit by a vehicle at some point. I think they go into a weird lab and there's something bad in there. It's definitely a rare low budget. But I'd kill for a clue. Much obliged!
