Famous examples of not telling all the cast what was going on...

I read somewhere that the only member of the cast who knew that the Alien was going to burst out of John Hurt's chest was John Hurt and this was done so that the shock on their faces was as genuine as possible. Similarly, that famous line from Empire Strikes Back was changed so that only James Earl Jones know the real line. Are there any other famous examples in cinema like the two above where not all the cast was privvy to what was actually going on to either keep the plot secret or to promote some sort of the one reaction to a scene?
